When winter is here, my home is blessed with the smell of different roasted flour.

A traditional sweet pinnis specially made in the winter season in many northern parts of India or north Indian family homes.

 


 

These pinnis are full of nutrients and super tasty. Incorporating suji, flax-seed, almond meal in your diet during winters will keep your body warm and high immunity.

 

So, try this homemade easy to follow step by step instructions to make pinni at home.

P.s you must have strong arms to roast the flour nicely.

 

Flaxseed

 

This is the brown coloured crop. It comes in flour and seed form(hard covering). These are packed full of healthy benefits. This is the superfood to be consumed in winter.

 

Super-food Why?

 

Flax-seed contains omega 3 fatty acid, lignans, fibre and many other ingredients.

 

Ingredients to make Pinnis

 

  • 3/4 cups Flaxseed Flour
  • 1 cup Whole wheat Flour(of your choice)
  • 1/2 cup Semolina Flour
  • 3/4 cup Almond Flour
  • 1/2 cup Coconut Flour
  • 60 gms (1/2 cup) Ghee/ Butter
  • 3/4 cup Sugar / Jaggery 250 gms or to taste.
  • Optional( Dry fruits)
  • 1/4 cup milk or as needed for binding the mixture 

 

 

 

Steps 

 

1) Take a pan or wok. Heat the pan and pour ghee into it. I used 1/2cup of ghee.

 

2) While the ghee melts in another pan, mix the flour:- Flaxseed flour, whole wheat flour, semolina flour, almond flour, coconut flour.

 

3) After the ghee is melted nicely, make the gas to low flame and pour the flour mixture in wok and roasted them for 1 hour until it turns brown and starts to leave its fragrance.

 

4) You should continuously stir the mixture otherwise the flour will get burned and won't taste good. Arm exercise is needed in this to make yummy pinnis.

 

5) After the flour started to leave its fragrance switch the gas off and remove the wok from the stove and keep it aside.

 

6) Keep aside sugar in 3/4 cup or if you are using jaggery melt it with water to have a smooth texture(don't use milk to bind if you are using jaggery).

 

7) For Jaggery Syrup:- Put jaggery (250 gms.) in the water (1 1/4 cup) in a pan. Stir the mixture till the jaggery dissolves completely into the water. Test the syrup by putting it between your forefinger and thumb. If the syrup leaves a string while parting the two, then it means the syrup is ready. Turn off the flame.

 

8)When the mixture of flour is half cooled down you can put the sugar or jaggery syrup to make balls. Remember if you are using brown or white sugar you have to add milk to make them into the ball. ( add milk little by little and start binding the mixture in small balls.)

 

9) Take out a small portion of the mixture equal to the size of a lemon. Prepare laddoo from the whole mixture giving it a round shape. 

 

10) Pinnis are ready. Store the pinni in an air-tight container, that can be consumed for over one month. Eat it every day along with tea.

This healthy pumpkin cake is favorite, fluffy, moist and absolutely delicious. It has a tender, moist and delicate crumb.

My family is not a fan of pumpkin.

But, this time I thought to try with sweets as my family is always carving for sweets.

There are many ways to use pumpkin as a sweet but I love to start it with the cake to go with tea.




Pumpkin Cake Recipe

Ingredients

2 cups all-purpose flour
1 1/2 cups granulated sugar
1 tsp baking soda (sifted to get rid of lumps)
2 tsp baking powder
2 tsp cinnamon
3 large eggs, room temp
1 cup oil (extra light olive oil or vegetable will work)
500 gm pumpkin( roasted in the oven to make a puree)
4 tsp milk



Method

Prep:


1)Preheat oven to 350˚F.
2) Using cooking spray or oil, grease a  non-stick baking pan.

Steps:


1. In a large bowl, whisk together the dry ingredients:
    2 cups flour,
    1 1/2 cups sugar,
    1 tsp baking soda,
    2 tsp baking powder,
    2 tsp cinnamon.




2. In a second medium bowl, whisk together wet ingredients:
    3 large eggs,
    1 cup oil ,
    4 tsp milk and
    1 can pumpkin, until well combined.





3. Add wet ingredients to dry ingredients and whisk until smooth.



4. Transfer to prepared baking dish and bake at 350˚F for 35-40 min (my oven took 35 mins), or until a toothpick poked in the center comes out clean.



5. Let cake cool completely in pan then spread the top with frosting or decorate with pecans or sprinkles.

Chicken fingers are the best yummy snack to eat on winter evenings or rainy days with hot tea sitting near a cozy corner with a book or a favorite TV channel.

Let's get started to make chicken fingers yummy snack for little ones where they do not want to rush to KFC to have a grab. 



Homemade food is awesome.

 

Here is the recipe to make chicken fingers:


Ingredients:

1/2 kilo Chicken thighs
3 tbsp thick homemade curd
the salt according to taste ( used 2tbsp to marinate)
1 tbsp red chili
1 tbsp turmeric powder
2 tbsp coriander and cumin powder
1/2 tbsp garam masala
3 tbsp of ginger and garlic paste
1 lemon 
breadcrumbs
2 eggs
oil for frying

Method:

1) Wash and clean the thighs. Cut the thighs into small chunks not too small but a finger size.

2) Marinate the thighs with curd, ginger garlic paste, salt, red chili, turmeric powder, coriander and cumin powder, garam masala, and juice of the full lemon.

3) Mix the mixture with your hands. Yes, with your lovely hands mix it well and check that the chicken is coated well.

4) Refrigerate the marination for at least 24 hours if you want juicy chicken with the taste of spices or if you are in hurry maximum of 2 hours if you are cooking on the same day.

5) Make the frying mixture, whisk the eggs and churn the bread to make crumbs or use preprocessed breadcrumbs.

6) When you fry, heat the oil nicely on the high flame when it gets hot and ready for frying bring the flame to medium and test it with little breadcrumb pieces.

7) Finally, fry the chicken putting into the egg yolk and then coating with breadcrumbs further, fry them in oil and your dish would be ready in minutes.

 Serve them hot.

Making Turkish bread for some is a challenge for me it was. I know how to knead the dough for Indian rotis but making Turkish bread is something different.



I tried to make it from searching in and around on google but every time I fail and get a burned or not cooked bread because I was still learning and always practice makes man perfect here women perfect. 

So I started to start searching around cafes where I could learn making bread but  I worked there not as a chef but a kitchen hand though at that time I could see how the chef is working and capture those moments in mind and then I try them at my home.

Finally, the day came where my perfect fluffy bread came out which I always dreamt off.



I mostly knead with the hand not with any machine because I believe with hands food becomes tastier rather than a machine.

So follows the recipe which I am sharing with you.

Makes two loaves of bread

Ingredients:


4cups(500g) whole wheat flour
1 1/2 cup (375 g) lukewarm water 
2 tbsp yeast
1 tbsp oil
1 tbsp sugar
1 tbsp salt
1/2 cup lukewarm milk
2 egg white if using small eggs / 1 egg white if using the large egg



For glaze:


2 egg yolk if using small eggs/ 1 egg yolk if using a large egg
2 tbsp milk
black and white sesame seeds


Method:


Preheat the oven for 180 degrees before.

1) Take a big bowl to add 1 cup lukewarm water with 1/2 cup lukewarm milk, 1 tbsp sugar, 2 tbsp yeast leave it for  5 - 10 min for the yeast to get active.



2) after 10 min add 1 tbsp oil, 1 tbsp sugar, eggs whites, 4 cups flour mix it well with hands.

3) knead the dough nicely for about 10 min. I use kitchen benchtop for kneading, putting four on the benchtop and then knead the dough over it. The dough would be bit sticky.



4) Cover the dough and leave it for 1 hour or if you can 4-5 hours to rise nicely. Like the picture below.



5) take the dough out on a benchtop and knead it again to make a ball shape and cut it into two half pieces. you will get two balls of bread to make.

6) take a baking pan with a baking sheet over it. Take one dough and flatten it with hands. cover it with the tea towel and let it prone for another 1 hour.

7) Prepare the glaze with egg yolk, milk that we will apply on bread after 1 hour.

8) After 1 hour applies glaze and makes some shapes with hands. Also, sprinkle some sesame seeds on top. 

9) Place the baking pan in the oven for 180 degrees for 20 min until golden.

Better to serve warm.
